How to prepare your Millet:
- Add 1 cup millet to 2-3 cups water (start with two and add more if it is too dry – grains are different with each harvested crop – so you must adjust the water as you go).
- NEVER stir millet, as it will turn into porridge.
- Bring to the boil with the lid on then turn down to the lowest temperature, keeping the lid on.
- Millet usually cooks within 15-20 minutes. Keep the lid on until you need to serve.
- You can add sweet or savoury ingredients to millet and serve it with any meal, as a salad, or as a porridge.

CHILLED MILLET SALAD
- 1 Cup millet (or quinoa), pre-cooked
- 2 Spring onions or a leek finely chopped
- 4 Celery stalks with leaves, sliced
- 2 Tbsp parsley, finely chopped
- 2 Tbsp mint, finely chopped
- 2 Tbsp coriander, finely chopped
- 2 Tomatoes, diced
- ½ Cucumber, diced
- Juice of 1 lemon
- ½ Cup of Mary-Ann’s EVOO (Extra Virgin Olive Oil)
Combine all ingredients and chill before serving.
