Red Quinoa has a strong, nutty flavour and has a marvellous chewy texture that works with any kind of dish from savoury recipes to salads.     How to cook your Quinoa

    • Add 1 cup well-rinsed quinoa to 2-3 cups water (start with 2 and add more if it is too dry – grains are different with each harvested crop – so you just have to adjust the water as you go.)
    • Bring to the boil with the lid on, then turn down to the lowest temperature keeping the lid on. NEVER stir quinoa as it will turn into porridge.
    • Quinoa usually cooks within 15-20 minutes. Keep the lid on until you need to serve.
    • You can add sweet or savoury ingredients to quinoa, just like rice and millet, or serve it as a salad.

    CHILLED QUINOA SALAD

    • 1 cup quinoa, pre-cooked
    • 2 spring onions or a leek finely chopped
    • 4 celery stalks with leaves, sliced
    • 2 Tbsp parsley, finely chopped
    • 2 Tbsp mint, finely chopped
    • 2 Tbsp coriander, finely chopped
    • 2 tomatoes, diced
    • 1⁄2 cucumber, diced
    • Juice of 1 lemon
    • 1⁄2 cup of Mary-Ann’s EVOO (Extra Virgin Olive Oil)

    Combine all ingredients and chill before serving.
